Mother’s Day is Sunday, May 14th and it is approaching fast. If you are hosting this Mother’s Day and need an easy menu and table setting ideas then keep reading! This Mother’s Day brunch is beautiful and delicious and best of all can be prepared the night before.

When I throw any sort of party, I always love to leave a treat on everyones plate. How beautiful are these cupcakes on these white plates? You can go ahead and make these cupcakes from scratch or from a cake mix. If you want to make them from scratch I’ve attached a great cupcake and icing recipe here. Or if you are short of time, you can use a cake mix (shhh… I won’t tell) and icing these cupcakes takes just seconds. Trust me, how you make these cupcakes is between you and your blender 🙂
This drink is citrusy and refreshing and the grenadine really helps with the pink colour theme. They are simple to make and mom will love them! This recipe makes 6 cocktails.
¾ cup (175 mL) 100% agave blanco tequila
¾ cup (175 mL) pulp-free Ruby Red grapefruit juice
6 tbsp (90 mL) strained fresh lime juice
6 tbsp (90 mL) Grenadine
1 bottle (750 mL) dry sparkling wine such as cava, chilled
Small ruby red grapefruit slices to garnish
1 – In a glass pitcher or jar, stir together tequila, grapefruit and lime juices and Grenadine. Cover tightly and refrigerate up to 4 hours in advance.
2 – For each drink, stir the mixture and pour 3 oz into a cocktail shaker. Add 3 ice cubes. Shake for 5 seconds. Strain into a Champagne flute. Top with sparkling wine, and garnish with a grapefruit slice.
Baked French Toast
For the main dish, I make baked french toast which my mom absolutely loves. The best part is that this dish is yummiest if it sits in the fridge all night. Just pop it in the oven about 1 hour before your mom arrives. The bonus is your house smells absolutely delicious. This is the recipe I use Baked French Toast Recipe.
Ok so if I’m keeping it real, I have made these scones from scratch but on occasion when i’m struggling with time, I have also bought the scones ready made and bought the canned whip cream, like the one here. Depending on how much time you have or if you’re a baker or not, it leaves you with options. If you want to make it from scratch I have attached the recipe I use for whipped cream here and for the scones here. Remember the scones can be made a day ahead.
Serve the baked french toast with a side of bacon and fruit salad. I promise you your mom will love it and best of all preparing everything a day in advance gives you more time with your mom instead of being stuck in the kitchen. Plus, if you’re a mom, it’s your day too!
